Vineyard: Mountainous vineyards in Kali Sykia, at an altitude of 600 meters. Trygos in mid-September.
Vinification: Classic white vinification in chilled grapes to extract all the aromas from the first stage. Fermentation at 18 degrees for 10 days and staying with the fine lees for 60 days to enrich the body and aroma.
Character: clear white-green colour, aromas of citrus fruits and white flowers as well as aromas of white tropical fruits. Full body and balanced acidity due to the high altitude of the vineyards. It accompanies excellent fish and seafood as well as white meat and dishes of the Cretan Traditional Cuisine. (DIO certification).
