Vineyard: Mountain vineyards in Kali Sykia, Rethymnon, at 550 meters altitude. Trygos in mid-September.
Vinification: Crushing and maceration of the grapes for 5 hours to extract the rosé colour and then classic vinification and fermentation at 16 degrees for 10 days, staying with the fine lees for 15 days to enrich the body and structure of the wine.
Character: pale pinkish colour, aromas of blackberry and strawberry as well as aromas of red tropical fruits, full body and balanced acidity due to the high altitude of the vineyards. It accompanies excellent fish and shrimps, crayfish as well as white meat and dishes of the Cretan Traditional Cuisine. (DIO certification).
